This week we are to share healthy recipes. Here are two of mine. Both are carbs. Hey, if I’m gonna cook, it’s probably carbs.

WHOLE WHEAT BREAD

adapted from a recipe by Fred Miller

185 Minutes to Prepare and Cook

Ingredients

8 cups spelt flour.

1 package dry yeast

2 tablespoons of honey

2 tablespoons kelp

2 tablespoons olive oil

1 cup water

1 cup powdered milk

3 cups warm water

1/2 cup brewer’s yeast powder

Directions

    Add yeast to 1 cup very warm, not boiling water along with honey and 1 cup flour.
    After 10 minutes it should be bubbling slightly, as the yeast is working.
    Add the powdered milk and 3 scant cups water, salt and oil. Blend in the rest of the flour, saving one cup to dust the kneading space. Knead for 5-10 minutes.
    Round up in a greased bowl.
    Cover with a damp cloth and let rise in a warm place for 1 hour.
    Punch down, put in 2 greased loaf pans. Cover with damp cloth and let rise 1 hour.

Bake 15 minutes in a 400 degree oven, then 20 minutes at 350 degrees. If desired butter crusts. Each loaf makes about 20 slices. The way I have it written here makes a heavy dense loaf that looks like a fallen cake. If you want a softer lighter loaf add half white flour.
Enjoy warm from the oven.

ENERGY BAR

30 Minutes to Prepare and Cook

Ingredients

    sunflower seeds 1 1/2 C
    pumpkin seeds 1 1/2 C
    flax seed meal 1 1/2 C
    chocolate chips 3/4 C
    raisins 1 1/2 C
    cinnamon 3 teaspoons
    applesauce, unsweetened 3 C
    almond butter 1 1/2 C
    honey 3/4 C
    spelt flour 1 1/2 C
    rolled oats 3 C

Directions

Mix all. Spread in greased pan. Bake at 350 for 30 minutes and divide in 32 bars. This also makes a dense bar. It’s very filling.
